This recipe is utilising what you
normally stock in you fridge and freezer.
You will need:
2 cups frozen peas
1 small/medium onion, chopped
1 clove of garlic, bruised
80 grams Ham, chopped (you can also use sandwich
ham slices)
1000 mil chicken stock (dilute the stock
if it is too salty)
A bit of oil to fry
2 tablespoons of flour
Salt & Pepper
2 Tablespoons of sour cream or crème fraiche
In a thick bottomed pot or cast iron casserole,
fry onion and garlic until soft. Add peas and fry further until soft. Sprinkle
flour over and stir thoroughly. Remove the pot from the heat and gradually add
stock. Bring to the boil and simmer covered for 10 to 15 minutes. Leave to cool
down a bit.
Transfer to blender/food processor and blitz until blended and creamy. Transfer the soup back to the casserole and reheat. If the soup is too thick, add more water. Add ham and cook until heated through. Add salt and pepper to taste. Garnish with sour cream or crème fraiche before serving. If you just have had a dental surgery, you will have to wait until it is cooling down so it is easier to handle and will not harm the clot. The beauty of this soup is that you can have it either cold or warm so it is also good to have it cold in warm weather, having dental surgery or not!.
