White Chocolate Cupcakes with White Chocolate Ganache


I got the recipe for this cupcakes from Cadbury Kitchen. I would love to go the whole hog with the original recipe but could not as it calls for walnuts! I have tweaked it to suit my time and one particular cake eater in the house who does not agree with nuts. The original recipe is a round cake but mine has been modified into cupcakes for shorter baking time. The recipe yields 10 – 12 cupcakes.

Cupcakes
125 grams butter
100 grams white chocolate
1 tablespoon espresso coffee (or 1 teaspoon instant coffee)
½ cup milk
1/3 cup + 1 tablespoon caster sugar
1 egg
1 cup flour
½ teaspoon baking powder
A pinch of salt

Pre heat the oven to 160 degrees C.
Sift flour, baking powder and salt together and set aside.
Place butter, chocolate, milk, coffee and sugar together in a saucepan and set on low heat until cooperate. Leave to cool down a little bit before beating in egg, add flour and beat on low until combine. Divide the batter into cupcake cases (lining the holes of cupcake pan), about ¾ to the top and bake for 40-45 minutes. Leave to cool down completely before icing with white chocolate ganache.

White Chocolate Ganache
125 grams white chocolate
¼ cream

Place the above ingredients together in a jug and microwave on half power for 1 minute. Stir to combine and leave too cool down before icing the cupcakes. Enjoy!
