Green Tomato Relish - Guest Post


Remember Tracey? She is our MasterChef material friend who is now happily married to Marcus. Their wedding was a romantic Island wedding in Rarotonga.We had dinner at their place last month and she gave us a jar of green tomato relish that was super yummy. We asked for the not so secret recipe, and here it is:

Here's the recipe...

3 dozen green tomatoes
2 green capsicum
2 red capsicum
6 medium-sized onions
5 teaspoons salt
5 teaspoons curry powder
5 teaspoons celery seed
3 cups malt or white vinegar
5 cups white sugar

Put tomatoes through a food processor, blender or hand minder.  Boil in own juice for 10 minutes.  Pour into a fine sieve or colander and let drain for 30 minutes.

Put capsicums and onions through a food processor until finely chopped.  Add tomatoes, capsicum & onions and the remaining ingredients into a large saucepan and boil for 20 minutes and pour into sterilized jars, & seal with hot lids.

I added a couple of chillies to mine, not that you would know.  No heat whatsoever, but still tasty.
